Momma's Kitchen {Pasta with Tomato and Blue Cheese}

So like I said in my first food post, Pioneer Woman Ree Drummond is totally inspiring. I love reading her blog. She makes me want to cook more and better (even though her family eats things that moo and mine doesn't, that's ok with me). I saw this recipe for Pasta With Tomato-Blue Cheese Sauce and it looked simple enough. I always like recipes that have all recognizable ingredients. This one took about 20 mins to make so that's a plus!

Let me tell you. Drop what you are doing. Go to the store, and buy some garlic, blue cheese, tomatoes, spinach, cream, and angel hair pasta. Because that's all you need to take a bite of bliss. It was so good I made it two nights in a row. The first night Brian had three servings. The second night we actually had some leftover, which I ate for lunch the following day. Then had seconds...and a late night snack finishing it off.

Go. Shop. Now.

My photo doesn't do it justice. But go check out Ree's photo for my convincing. It's so easy. But heed her advice, don't over cook the spinach! It will shrivel quickly.

I had also picked up a big bag of nectarines at the store for $1.99. So I searched for something sweet and found this great recipe for nectarine pie. Another super easy and fast recipe that yields great results.

If you make this one, listen to the reviewers advice and add the crumble topping to it. So worth it.

I think it is safe to say I am well into my second trimester and my appetite is fully back. Although I do wish I was craving Indian Food again.
